Whole30 Cooking – 7 days In

At first I thought this wasn’t going to be good. The combination just didn’t sound right to me but I was so wrong. It was delicious!! It was really easy to make – even with all of the ingredients. I don’t know if I am legally allowed to share recipes straight from the book but I can tell you what my mom and I have made so far.

    • Sweet Potato Chili – sooooo good that we made it twice.
    • chicken with roasted carrots & potatoes w/a side salad (Whole30 approved dressing) – delicious!
    • Herb Crusted Salmon with Brussels Sprouts and Bacon – it’s good but the Brussels sprouts aren’t that great reheated.
    • Beef Roast and Potatoes (slow cooker) – not too bad. Beef isn’t my favorite thing so I won’t be going for this one again.
    • Chicken Salad (made w/Whole30 approved Mayo) – really good. This will be made again.
    • Roasted Chicken – good

there was another meal but i can’t think of it at the time. We’ve also made sure to stop up on healthier options of snacks instead of chips or something sweet:

  • apples
  • grapes
  • oranges
  • pears
  • salami slices
  • almonds
  • plantain chips
  • Larabars (you have to check the ingredients because not all are Whole30 compliant)

We are still looking into snacks that are nutritious and filling. Trying to not eat too much fruit as it is high in sugar. It has only been a week but I definitely see positive a change in my energy levels. My afternoon crash doesn’t hit and that’s amazing! I never thought I’d see the day that 2:30 wasn’t an automatic want to sleep. I am waiting to see if my sugar cravings decrease and for the changes in my skin. I have pretty clear skin naturally but there is room for improvement. That is all for now. Below is a picture of the sweet potato chili.
